Domain

In 1973 Alain Maurel set up, with the help of his father, the Domain Ventenac. After carefully observing the different climatic and geological times, after visiting the largest vineyards in the world, he was one of the first to make his vineyard changed.

The first decision was based on a key idea: The quality process must be built from the grape to the bottle. The winemaking is a chain where there cannot be a weak link: This idea is applied on their entire range, from the "Domaine Ventenac" to "Mas Ventenac" the ultimate expression of their terroir and our expertise. Since 1999, AOC Cabardès is among the most reputed terroir of the Languedoc Roussillon, both for the high quality of its wines and their originality. 

The vineyard was replanted with high densities: 6500 vines per hectare, while the average density in the region is of 4000 vines.

Characteristics

The « Château Ventenac » product range is dedicated to our AOC wines. As opposed to the « Domaine Ventenac » range where the respect of the varietal typicity is the main directive in the wines' elaboration, we attempt to reveal with this brandour terroir. They are vinified accordingly in the following philosophy: the respect of the typicity of the AOC. The blend necessarily contains 40% of the Atlantic varieties and 40% of the Mediterranean varieties, but varies with the vintage.

The Château Ventenac « Réserve » is the fresh expression of this terroir, presenting intense aromas of red fruits heightened by spicier scents. Olivier Rame from the Chateau Ventenac is considered as one of the best winemaker of its generation. Working on a particular appellation, permitting the blend of Bordeaux and Languedoc grape varieties, the only one in France, he received many remarkable comments from the most famous wine advisors. It has absolute respect of the balance wrapped in fine tannins, even after 12 months of wood ageing.

LANGUEDOC - ROUSSILLON : Cabardes

The Cabardès vineyard lies in the foothills of the Massif Central, called « the black mountain », 10 km from Carcassonne. The Cabardès, classified as an AOC (Appelation d’Origine Controlée) since 1999, is among the most reputed viticultural terroirs of the Languedoc Roussillon, both for the high quality of its wines and their originality. Indeed, at only a short distance from the threshold of Naurouze (water divide), the transitional climate of the Cabardès associates the Mediterranean sunshine, to the rainfall of Bordeaux. Consequently, the Cabardès is the only appellation which mandates the cultivation of the “Mediterranean" grape varieties (Syrah, Grenache…) alongside the traditional "Bordeaux" varieties (Merlot, Cabernet Sauvignon, Cabernet Franc…) in such even proportions (40% minimum in the final blend of each of the two origins).

MERLOT: Color, red fruits and elegant tannins
- Since 18th Century
- Born in the Libournais (St Emilion)
- Rapid maturity
- Features : fine, elegant and round
- Mouth soft and silky
- Prefer cold soils like clay or sandy.
- Merlot is small black berries with a thin skin, less of pips and a red juice.
- Naturals aromas of strawberries and raspberries compoted for young wines.
- Aromas of chocolate, leather, spices and violet for old wines.
- Very used on the right bank of Bordeaux.
CABERNET SAUVIGNON: Tannins and structure.

- Born in South West of France
- Blend between Cabernet Franc et Sauvignon Blanc
Long maturity
- With Merlot, the most famous grape varieties in the world. Produced in America (Napa Valley), Australia, Italia, Spain, South-America, South-Africa.
- Very resistant to all climates in the world
- Prefer hot soils like gravels or stones.
- Cabernet sauvignon berries are small with a thick skin and lots of pips

- Naturals aromas of liquorice, cassis, cherries, mint, leather and tobacco.
- Very used on the left bank of Bordeaux, in Medoc, Haut Medoc and Graves.

SYRAH : Sensual and spicy
- Since 19th Century
- Implanted in Rhone Valley, Languedoc-Roussillon, Provence
- Rapid maturity
- Features : Susceptible to disease, small quantity of juice but very colored and aromatic wines.
- Mouth gourmand and sensual
- Prefers clayey-limestone, gravels, stones soils.
- Rich in tannins but silky.
- Natural aromas of spices, raspberries, violet, cassis for young wines.
- Aromas of jammy fruits (prune), tobacco and animals flavors like leather, horses for old wines.

GRENACHE : Juicy, sunny and sweet
- Spanish origins
- Since 19th Century.
- Implanted in Rhone Valley, Languedoc-Roussillon, Provence
- Rapid maturity with big yield.
- Features : Susceptible to disease, big quantity of juice, very colored and aromatic wines.
- Mouth gourmand and generous in sweet.
- Prefers gravels, stones soils.
- Small berries with silky tannins.
- Natural aromas of reds fruits, spices, chocolate for young wines.
- Aromas of prune, moka, cherry brandy and dry fruits (nuts) for old wines..

Since 2005, Ping Yang Savetier fell in love with French wines (and men as she married a French guy ;) She loves to drink fine wines, but she feels like knowing them is even greater!
